Pan American School Implements New School Meal Service Model across Both Campuses

During the 2024-2025 academic year, the Paetzel Campus launched a transformation of its school dining services. Following the successful implementation, the initiative expanded to the Obino Campus for the 2025-2026 academic year, bringing the enhanced dining experience to students across both campuses. The initiative aims to strengthen meal quality through careful ingredient selection and preparation methods, foster students' curiosity about food, and create joyful daily dining experiences with colleagues. 

This process has been led by BananaMaçã, a specialized school meal consultancy founded by Marcelo Schambeck and Flavia Mu. The couple also operates Capincho Restaurant in Porto Alegre, recognized as the Best Restaurant in Rio Grande do Sul by Prazeres da Mesa and listed among Brazil's top 50 restaurants by Exame Magazine.

The consultancy represents an important step forward in promoting healthy eating habits among students. The project planning included technical site visits, nutritional analyses, and active listening to understand the needs of both students and families.

Besides the lunch and snacks changes, the initiative also involved infrastructure adaptations, the acquisition of new equipment, ongoing oversight by both the consultancy and the committee, and the establishment of clear communication channels between the school teams and BananaMaçã. "Meals are prepared with fresh, seasonal ingredients, prioritizing the gradual introduction of new flavors and celebrating culinary diversity," explains Ms. Mariana Hertz, PAC Cafeteria Committee member.

The approach encourages students' curiosity while also fostering autonomy at the table. Children are now encouraged to choose what they will eat, serve themselves, try new foods, and honor their own hunger and fullness cues. "This process develops essential skills, including self-regulation, decision-making, motor coordination, and responsibility. At the same time, it reinforces values such as reducing food waste, finding joy in eating, and building community through shared meals, transforming mealtime into a comprehensive learning opportunity," observes Ms. Bárbara Ribeiro, Director of the Brazilian Program and PAC Cafeteria Work Team member.

The transformation of the dining experience has been warmly received by the school community and reflects a collaborative effort among PAS leadership, the PAC Cafeteria Work Team, and families. Training sessions are planned for additional community members who will serve as ambassadors of healthy eating practices. Through this initiative, the school reaffirms its commitment to student well-being and whole-child development.
